A delicious dip to go with any veggie snack. Made with cashews, spices and wholesome oils, it's the perfect health kick for your day.
INGREDIENTS

2 cup soaked raw cashews for 2 hours, then rinsed and drained

1/3 cup organic tahini

Juice from1 fresh lemon, or to taste

2 tablespoons extra virgin olive oil

1 organic minced garlic

2 teaspoons cumin

1 teaspoon sesame oil

2 teaspoon ground coriander

1/2 teaspoon paprika

Dash cayenne pepper

Pinch of sea salt, to taste
Optional
-
1 roasted red capsicum
-
6 sun-dried tomatoes

Fresh parsley
INSTRUCTIONS:
Combine the soaked cashews, and all other ingredients in a food processor and
blend until smooth and creamy.
If it needs a more silky body, add a little more extra virgin olive oil. If you like a
stronger tahini taste, add another tablespoon of tahini. Adjust the seasonings to
your liking.
Note - if your lemon does not yield enough juice and you may need more liquid, use
two lemons if you need to. Just make sure you taste test.
Store in the fridge in a covered glass bowl or storage container. The flavours get
better as it chills. Chilling the hummus also thickens it.
