Some like it ho! Add a little spice to your snacks with this delicious Cheesy Kale Chips recipe. This quick snack is bursting full of yummy kale goodness - one of the most nutritionally rich plant foods in the world. Plus add a little spice for an immunity kick. It's all good things for snacking, and completely vegan too!
INGREDIENTS:

1 bunch kale leaves

1 tbsp extra virgin olive oil or melted coconut oil

2-3 tbsp nutritional yeast

¼ cup cashews (soaked for at least 30 min and drained)

3/4 tsp cayenne pepper powder

1 tsp smoked paprika
-
1tsp of ground coriander
-
2 tbsp of sesame seeds
-
2 tbsp of black sesame seeds

1 tsp of fennel seeds
-
1/2 tsp fine grain sea salt or pink Himalayan sea salt

¼ teaspoon of chilli flakes (optional)
INSTRUCTIONS:

Preheat oven to 160C. Line a large rimmed baking sheet with parchment paper.

Remove leaves from the stems of the kale and roughly tear it up into large pieces.. Wash and spin the leaves until thoroughly dry.

Add kale leaves into a large bowl. Massage in the oil until all the leaves are coated. Place all other ingredients in a food processor and pulse to mix well adding a little olive oil if required. Then massage onto the kale.

Spread out the kale onto the prepared baking sheet into a single layer, being sure not to overcrowd the kale.

Bake for 15-20 minutes, until the kale begins to firm up. The kale will look shrunken, but this is normal.

Cool the kale in a wire rack or plate and store in an airtight container.
