Sometimes reaching into the cookie jar is all too tempting, especially after we reach that mid-afternoon slump! Instead of going for the high-calorie, high-sugar, high-processed ones you get in the packet, try this recipe!

INGREDIENTS

  • 1½ cup almond meal

  • ¼ cup cacao nibs

  • ¼ cup dried cranberries

  • ½ cup coconut, shredded

  • 1 tsp baking powder

  • ¼ tsp sea salt

  •  cup coconut sugar

  • 1 egg (2 eggs if small)

  • 3 tbsp coconut oil, melted

  • ½ tsp vanilla bean powder

INSTRUCTIONS

  • Preheat oven to 180 degrees. 

  • In a mixing bowl mix together the dry ingredients.

  • In a separate bowl, whisk the egg until doubled in volume.

  • Whisk in the coconut oil and ½ tsp of vanilla powder.

  • Add the egg mixture to the dry ingredients and fold until the mixture comes together. 

  • Roll mixture between 2 sheets of baking paper until 1cm thick and use a cookie cutter to cut out the cookie shapes.

  • Bake these rounds for about 7‐10 minutes or until golden.
