Sometimes reaching into the cookie jar is all too tempting, especially after we reach that mid-afternoon slump! Instead of going for the high-calorie, high-sugar, high-processed ones you get in the packet, try this recipe!
INGREDIENTS

1½ cup almond meal

¼ cup cacao nibs

¼ cup dried cranberries

½ cup coconut, shredded

1 tsp baking powder

¼ tsp sea salt

⅓ cup coconut sugar

1 egg (2 eggs if small)

3 tbsp coconut oil, melted

½ tsp vanilla bean powder
INSTRUCTIONS

Preheat oven to 180 degrees.

In a mixing bowl mix together the dry ingredients.

In a separate bowl, whisk the egg until doubled in volume.

Whisk in the coconut oil and ½ tsp of vanilla powder.

Add the egg mixture to the dry ingredients and fold until the mixture comes together.

Roll mixture between 2 sheets of baking paper until 1cm thick and use a cookie cutter to cut out the cookie shapes.

Bake these rounds for about 7‐10 minutes or until golden.
