Quinoa has been in the spotlight for a few years now! Gluten-free, low-calorie, high in fibre and a source of protein, there's a reason why it's so highly rated as a grain alternative. It's a great way to bulk up salads and to add a nutritional boost, as we show it the recipe below. Perfect for lunch or a side for dinner.
INGREDIENTS
Makes one large salad

1-2 cups cooked quinoa

½ cup chopped parsley

½ cup chopped cilantro

1/3 cup chopped mint

1 cucumber, diced

2 shallots, thinly sliced

½ green capsicum diced
-
½ pepitas(soaked overnight)

Salt and pepper
Optional

Green olives
-
Capers
-
Green chilli
-
Cranberries
Zesty lemon dressing

1/4 cup extra-virgin olive oil

3-4 tablespoons fresh lemon juice

1 teaspoon grated lemon zest

Salt and freshly ground pepper

2 teaspoons Dijon mustard

1 garlic clove, pressed
INSTRUCTIONS

Salad: Mix all ingredients together in a bowl until well incorporated. Taste and adjust salt and pepper to your liking.

Dressing: Combine all of the ingredients in a jar and shake to emulsify.
