Quinoa has been in the spotlight for a few years now! Gluten-free, low-calorie, high in fibre and a source of protein, there's a reason why it's so highly rated as a grain alternative. It's a great way to bulk up salads and to add a nutritional boost, as we show it the recipe below. Perfect for lunch or a side for dinner.

 

INGREDIENTS

Makes one large salad

  • 1-2 cups cooked quinoa

  • ½ cup chopped parsley

  • ½ cup chopped cilantro

  • 1/3 cup chopped mint

  • 1 cucumber, diced

  • 2 shallots, thinly sliced

  • ½ green capsicum diced

  • ½ pepitas(soaked overnight)

  • Salt and pepper

Optional

  • Green olives

  • Capers

  • Green chilli

  • Cranberries

Zesty lemon dressing

  • 1/4 cup extra-virgin olive oil

  • 3-4 tablespoons fresh lemon juice

  • 1 teaspoon grated lemon zest

  • Salt and freshly ground pepper

  • 2 teaspoons Dijon mustard

  • 1 garlic clove, pressed

INSTRUCTIONS​​

  • Salad: Mix all ingredients together in a bowl until well incorporated. Taste and adjust salt and pepper to your liking.

  • Dressing: Combine all of the ingredients in a jar and shake to emulsify.
