If you're in the mood for a little bit of fish for your dinner, these salmon patties are deliciously perfect. Make sure you buy sustainably caught salmon, and pair the patties with your favorite salad for a summertime meal.
INGREDIENTS
Makes 6

100-150 g fresh wild-caught salmon or 1 can of wild-caught salmon

2 spring onions finely chopped

1 tbsp of hazelnut or almond meal

3 tbsp of buckwheat flour

½ grated zucchini
-
1 egg
-
1-2 tbsp of coconut oil

Optional: a handful of chopped green olives
INSTRUCTIONS

If you are using fresh salmon, poach it in boiling water and let it cool down.

Mix the salmon, spring onions, and zucchini.

Add the hazelnut or almond flour, and the buckwheat flour.

Beat the egg and add to the mixture.

Add the olives if using them.

Combine so that all ingredients bind together. Once combined, form into small patties.

Place the coconut oil in a frying pan and heat. Shallow fry the patties for a couple of minutes on each side over medium heat, till they a slightly brown and the egg is cooked.

Serve patties with some green salad.
