If you're in the mood for a little bit of fish for your dinner, these salmon patties are deliciously perfect. Make sure you buy sustainably caught salmon, and pair the patties with your favorite salad for a summertime meal.

INGREDIENTS

Makes 6

  • 100-150 g fresh wild-caught salmon or 1 can of wild-caught salmon

  • 2 spring onions finely chopped

  • 1 tbsp of hazelnut or almond meal

  • 3 tbsp of buckwheat flour

  • ½ grated zucchini

  • 1 egg

  • 1-2 tbsp of coconut oil

  • Optional: a handful of chopped green olives

 

INSTRUCTIONS

  • If you are using fresh salmon, poach it in boiling water and let it cool down.

  • Mix the salmon, spring onions, and zucchini.

  • Add the hazelnut or almond flour, and the buckwheat flour.

  • Beat the egg and add to the mixture.

  • Add the olives if using them.

  • Combine so that all ingredients bind together. Once combined, form into small patties.

  • Place the coconut oil in a frying pan and heat. Shallow fry the patties for a couple of minutes on each side over medium heat, till they a slightly brown and the egg is cooked.

  • Serve patties with some green salad.
