Almond Milk

Why buy expensive pre-made milk alternatives, when you can make it fresh for a lot cheaper and healthier! Almond milk is a favorite among those looking for a nut-milks, and although requires a little time and patience, the results from this fool-proof recipe will swear you off shop bought for life!


2 cup organic raw almonds soaked for 12 hours (overnight)

4 - 5 cups of purified water

1 drop of lemon oil (or lemon juice)

Pinch of salt

Optional: 2-3 medjool dates and a dash or sprinkle of vanilla


  • To prepare the almonds, place the raw almonds in a bowl or large jar. Cover with filtered water and leave in the fridge overnight.

  • Once soaked, rinse the nuts several times to remove any of the anti-nutrients and enzyme inhibitors, (in order to maximize the nutrient value). The almonds would have swelled with water and look a lot more plump.

  • Put almonds, oil and water in your blender and start blending at low speed.

  • Increase the speed to pulverize the nuts completely until they are thoroughly blended

  • Strain into a nut milk bag or muslin cloth.

  • To strain: place a nut bag over the opening of a bowl, jar or jug. Pour small amounts of almond milk into the bag, and then squeeze it like a cow teet until every last drop is out. Keep repeating the process. Make sure you squeeze the cloth to get the last bit of liquid out.
