Almond Milk

Why buy expensive pre-made milk alternatives, when you can make it fresh for a lot cheaper and healthier! Almond milk is a favorite among those looking for a nut-milks, and although requires a little time and patience, the results from this fool-proof recipe will swear you off shop bought for life!

INGREDIENTS
2 cup organic raw almonds soaked for 12 hours (overnight)
4 - 5 cups of purified water
1 drop of lemon oil (or lemon juice)
Pinch of salt
Optional: 2-3 medjool dates and a dash or sprinkle of vanilla
INSTRUCTIONS
To prepare the almonds, place the raw almonds in a bowl or large jar. Cover with filtered water and leave in the fridge overnight.
Once soaked, rinse the nuts several times to remove any of the anti-nutrients and enzyme inhibitors, (in order to maximize the nutrient value). The almonds would have swelled with water and look a lot more plump.
Put almonds, oil and water in your blender and start blending at low speed.
Increase the speed to pulverize the nuts completely until they are thoroughly blended
Strain into a nut milk bag or muslin cloth.
To strain: place a nut bag over the opening of a bowl, jar or jug. Pour small amounts of almond milk into the bag, and then squeeze it like a cow teet until every last drop is out. Keep repeating the process. Make sure you squeeze the cloth to get the last bit of liquid out.
Store in a glass jar/bottle in the fridge if you are going to keep for later. It will keep for about 7 days in the fridge.
