Cashew Hummus

A delicious dip to go with any veggie snack. Made with cashews, spices and wholesome oils, it's the perfect health kick for your day.



INGREDIENTS

  • 2 cup soaked raw cashews for 2 hours, then rinsed and drained

  • 1/3 cup organic tahini  

  • Juice from 1 fresh lemon, or to taste (3/4 cup)

  • 2 tablespoons extra virgin olive oil 

  • 1 organic minced garlic 

  • 2 teaspoons cumin

  • 1 teaspoon sesame oil

  • 2 teaspoon ground coriander

  • 1/2 teaspoon paprika

  • Dash cayenne pepper

  • Pinch of sea salt, to taste

Optional

  • 1 roasted red capsicum

  • 6 sun dried tomatoes

  • Fresh parsley


INSTRUCTIONS: 

Combine the soaked cashews, and all other ingredients in a food processor and

blend until smooth and creamy. 


If it needs more silky body, add a little more extra virgin olive oil. If you like a

stronger tahini taste, add another tablespoon of tahini. Adjust the seasonings to

your liking. 


Note - if your lemon does not yield enough juice, you may need more liquid, use

two lemons if you need to. Taste test. 


Store in the fridge- in a covered glass bowl or storage container. The flavours get

better as it chills. Chilling the hummus also thickens it.
