Cauliflower Pizza

Pizza - quite possibly one of the best things that came out of Italy! But sometimes the traditional thin base gets thick and heavy with bread, or is a nightmare for those with gluten or wheat free diets. In comes the saving grace - cauliflower! You heard right! Cooked with some cheese and herbs, you have the perfect gluten and wheat free base for your pizza of choice.

INGREDIENTS
Half- one cauliflower, trimmed, chopped
1 egg, lightly whisked
1/3 cup finely grated parmesan or another cheese of your choice
Option: you can add dried oregano or garlic powder as well.
Topping ideas:
Tomato sauce
Pesto
Sliced tomatoes
Olives
Mushrooms
Goats feta
INSTRUCTIONS
Process the cauliflower in a food processor until finely chopped.
Place chopped cauliflower in a microwave-safe bowl and cooked until soft.
Place cauliflower in a fine sieve, pressing down well with a wooden spoon to remove excess liquid.
Combine the cauliflower, egg and half the parmesan in a bowl.
Preheat oven to 210°C. Line a tray with baking paper. Press cauliflower mixture firmly into the tray.
Bake for 20 minutes or until golden.
Spread desired topping over base and bake for another 5-10 minutes depending on topping.
