Salmon and Zucchini Patties

If you're in the mood for a little bit of fish for your dinner, these salmon patties are the deliciously perfect. Make sure you buy sustainably caught salmon, and pair the patties with your favorite salad for a summertime meal.





INGREDIENTS

Makes 6

100-150 g fresh wild caught salmon or 1 can of wild caught salmon

2 spring onions finely chopped

1 tbsp of hazelnut or almond meal

3 tbsp of buckwheat flour

½ grated zucchini

1 egg

1-2 tbsp of coconut oil

Optional: a handful of chopped green olives


INSTRUCTIONS

  • If you are using fresh salmon, poach it in boiling water and let it cool down.
